Story of Scooter Spice
It all started one night after I was called by my good buddy Scott wanting to complete at the San Jacinto festival, the local cooking contest in West Columbia, Texas. OK, so being the cook of minimal experience I thought I could quickly come up with a winning combination. Well, Scotty my best friend had just come back from the island of Curacao had brought me a mortar and pestle made of ironwood. I decided to make a killer concoction of spices to win the San Jacinto Festival Cook Off. I started mixing and for some reason I wrote down what I made in the back of an old cookbook my Mom had given me.
I awoke the next morning and found the glorious concoction on the counter. Remembering what I had made; I tasted it and consider it quite edible. Finding the recipe in the back of the book, I made a large bag full and took it to the contest thinking I was going take the crowd by surprise.
Well I went on down to West Columbia and we gather to cook a bunch of meat. It took a little doing but we entered the contest under the name of “Captain Scooter’s Irate Pirate Coastal Cowboy Cooking Team”. As we went into the cook off, we lit the pit, stacked on the meat with our tag #1 and a boat sack of Matagorda Bay Oyster for appetizers. After a night of enjoying the companionship of our fellow contestants we crawled under the pit to keep warm and called it a night. Next morning we were awakened by the neighbors telling us the BBQ pit had gone out. After crawling out from under the BBQ pit, we lit up the fire again and continued cooking. Thinking we had a good chance at winning some minor trophy we waited as they passed them out, it got down to the last one, 1st place brisket. The announcer kept calling out number 7, number7, number 7, it was about this time I realized we had 7 and not 1. After all the jumping around and celebrating, a number of the cooks wanted to taste the brisket since we didn’t look like we had a chance of winning anything.
Scotty took the remaining brisket, sliced it and let everyone have a taste. As it turned out, it still is the basis for the present brisket recipe. I’ll never forget one of the contestant’s comments: Yup, kicked my Axx. That’s where the Scooter Spice got its start. It has ridden with me all over the United Stated and Caribbean, been around the world with many of my friends and I hope all will continue to enjoy it.
