Etouffee al la Scooter

 This is one of our current favorites.  Not only because it is very good but that we can prepare in about 30-45minutes.

 

Ingredients:

 

1-2 TBS of Original Scooter Spice

1/2 cup Chopped celery

1/2 cup Chopped onion or green onion

3-4 cloves of chopped garlic 

1/4 cup Chopped carrot (not required)

3/4 stick of butter

1 can - Campbell's        

          Golden Mushroom Soup

8oz of cream (wine can be substituted quite nicely to cut the calories)

1 lb of peeled shrimp, crawfish or scallops or a mix of all three

1 1/2 cup of rice

 

Equipment:

Deep pan on the stove, prefer one with a cover.

Instructions:

 

1.  Start Rice

2.  Chop up vegtables

3.  Sautee vegtables and garlic in butter until tender (15 - 20minutes)

4.  Pour Golden Mushroom Soup into pan

5.  Fill empty Golden Mushroom can up with the cream or wine and pour into pan

6.  Put in seafood

7.  Wait about 5-10 minutes to serve with the now completed rice.  

 

Serves about six (well 4 hungry) adults.
